Apple-Cheddar Dutch Baby

Served as either a brunch or dinner, this skillet-baked dish is the perfect comfort food on a brisk autumn day. Add maple syrup to taste at any time of day! This recipe serves four. Total cooking time takes roughly 40 minutes.

 

Ingredients

4 tablespoons (½ stick) unsalted butter
2 Honeycrisp apples, cored and cut into ½” slices
1 teaspoon kosher salt, divided
8 large eggs
1 cup milk
1 cup all-purpose flour
1½ cups shredded extra sharp cheddar cheese (about 6 ounces)
Maple syrup to taste

 

Preparation

 

Step 1

Place a 10″ cast iron skillet in the oven and preheat to 450°. Add eggs and milk to a blender, then add flour and ¾ teaspoon salt and blend until smooth. Set the batter aside.

 

Step 2

Once the oven is preheated, remove the skillet and place it on the stove top over medium heat. Add butter and melt until bubbling, then add apple slices and ¼ teaspoon of salt. Cover and cook until the apples are tender, about 5 to 7 minutes. Pour the batter from the blender into the skillet and top with the shredded cheese. Place the skillet in the oven and bake until puffed and golden, about 20 to 25 minutes. Cut in wedges to serve, adding maple syrup drizzle to taste.
