Springtime Pea & Strawberry Salad with Champagne Vinaigrette

This recipe is for 4 servings. Total preparation takes roughly 20 minutes.




8 Cups Mixed Salad Greens
1 Cup Snap Peas, Trimmed
¾ Cup Sliced Strawberries
½ Cup Shelled Fresh Peas
¼ Cup Crumbled Feta Cheese
¼ Cup Chopped Fresh Mint



½ Cup Extra Virgin Olive Oil
¼ Cup Champagne Vinegar
2 Teaspoons Apple Cider Vinegar
1 Tablespoon Finely Minced Shallot
1 Tablespoon Honey
1 Pinch Sea Salt
3 Turns Freshly Ground Pepper



Step 1: Salad

Arrange the salad greens, snap peas, strawberries, peas, and feta on a serving platter.


Step 2: Dressing

Place all dressing ingredients in a food processor or blender. Start at a low speed and gradually increase until the mixture is perfectly smooth. Drizzle over salad to serve.


For any extra or unused dressing, store in an airtight sealed container in the refrigerator. Shake well before use.
